I have three hungry kiddos at home and was trying to come up with a Hurry Up and Eat menu, when I remembered one of their favorite Cheesy Chicken Quesadillas! We’re actually having this for lunch at our house today, but it’s a great quick meal that you can try before you’re running to the ball field, swimming lessons, or wherever you’re headed in a hurry.
I’m not one to cook seperate meals for my picky kids (though they are awfully picky), but I do try to come with ways to keep us all happy when planning our meals. When I make these for the kids, I make theirs with just plain cheese and chicken, and in a seperate pan I add the spicy stuff for my hubby and me. Here’s what you’ll need (for the grown up version, but you’ll have enough for grown ups and kids both!)
1 Taco Bell Home Originals Dinner Taco Dinner Kit

$1/3 Taco Bell Jun 2010 All You Magazine (exp 7/31/2010)
1 cup cooked chicken
If you don’t have any stockpiled, try Valley Fresh White Chicken In Water, 97% Fat Free, 12.5 oz can, BOGO $3.49, I actually used stockpiled cooked turkey breast and it was pretty good!
3/4 cup water
2 cups shredded cheese
Kraft Shredded Cheese or Cubes, 5.8 to 8 oz pkg, 2/$4, look for $1/2 Blinkie; we used 4-cheese Mexican
Combine 1 cup cooked chicken, 3/4 water, and seasoning pouch from taco kit. Bring to boil and let simmer one minute. Spray Pam in medium skillet, add one soft taco, top with 1/2 cup chicken mixture, sprinkle with cheese. Cook over medium heat about 3-4 minutes, until warmed through and slightly browned. Remove from skillet and cut with pizza cutter before serving. Top with salsa (right there in the Taco Bell kit!) and Sour Cream.
