This is such a yummy easy treat for your family – when I asked my Caroline what she thought her comment was “DEEEEEE-licious” (and she doesn’t even like mint ice cream!) It’s a perfect treat for the last day of school, or to enjoy on a hot summer day. YUMMMMM!Here’s what you’ll need . . .
1 carton Mint Chocolate Chip Ice Cream Thaw a few minutes before putting this together!

1 box Keebler Fudge Shopper Grasshopper Cookies

1/2 cup green and brown M and M’s You could use any color but these fit the “mint” look!

Chocolate Syrup
We used Publix brand priced at $1.49
2 tablespoons margarine or butter
Melt margarine. Crush cookies and mix with margarine (we used our Pampered Chef Chopper to crush the cookies and it made it really simple!) Press cookie mixture into greased pie plate. Spoon ice cream on top cookie mixture (I kind of ”sliced” it and laid it into the pan - it was cold though!) Chop M and M’s (again, use that Pampered Chef chopper) and sprinkle on top, then drizzle with chocolate syrup. Freeze until hardened, 2-4 hours.
To serve, place pie plate in hot water in sink for a few minutes to soften crust. Top with a little cool whip (optional, not so optional at our house . . .), enjoy!
