What's for Easter Dinner? Hashbrown Casserole

So, here’s my final yummy side dish for Easter Sunday.  This is more just goooooood stuff!  I know you may think our family lives on nothing but a little buttered Ritz and cheese, but really, are there many things in life better than buttered Ritz?  Because it’s Easter we’ll enjoy our favorites, and next week I’ll get back to more reasonably healthy meals!  Here’s what you’ll need . . .

2 lb. bag square hashbrowns
$1/1 Ore Ida from 3/21 SS

1 stick margarine

1 can cream of chicken
$1/2 Campbell’s Cream Soups HERE, on sale at Target 2/$1 this week!

8 oz. sour cream
Daisy Sour Cream on Sale $.99, Use $.60 HERE

3 cups shredded cheddar
Kraft Shredded Cheese On Sale $1.66,use $1/1 or $2/2 Blinkie

1/4 cup onion

Topping:
1/2 stick margarine

1 sleeve Ritz Crackers (crushed)
Ritz Crackers BOGO $3.39, Use $1/2 from Kraft Game Day Greats (expires 3/31), or $1/1 from 1/24 SS

Mix together casserole ingredients in large bowl and transfer to 9×13 pan. Melt margarine in microwave, and then mix with Ritz crackers. Top casserole with crackers & bake at 350 for 30-40 minutes (it always seems to take mine 40 minutes – just check your center to make sure they are cooked through).
