I’ve never cooked a boston roast before, but when I saw they were on sale I decided it would make a yummy warm dinner while it’s chilly outside. The meat is a little pricy, but it will probably feed us two meals. I tweaked with All Recipes a little by omitting the mushroom they suggested and changing the recipe to serve 6 (I think we’ll still have plenty of leftovers!) They also recommend cooking it as directed below, but I noticed a few suggestions to cook it in a crock pot on low for 7 hours after searing, so I may try that. I’ll let you know how it goes over at our house!
Roast (serves 6)
Salt and Pepper to taste
Garlic powder to taste
5 lb. boston butt roast (Bone in on sale $1.19/lb. or Boneless on sale $1.79/lb.)
1 1/2 onion sliced
15 new potatoes
12 carrots (hopefully you bought some during the BOGO Sale last week!)
Preheat oven to 350. Sprinkle pork on all sides with salt, pepper and garlic powder, rub into meat. Sear meat on all sides until lightly brown. Transfer to roasting pan. Fill pan 2/3 full of water. Cover and place in pre-heated oven 3 hours. Add potatoes and carrots; cover and cook one more hour. Remove and let stand at least 10 minutes before serving.
